Keto Banana Bread


Whatcha Need

  • 4 medium ripe bananas; cut in pieces

  • 1 1/2 cups almond flour

  • 1/2 cup coconut flour

  • 2 teaspoon baking powder

  • 2 teaspoon ground cinnamon

  • 1/8 teaspoon kosher salt

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 2 tablespoons coconut oil; melted

  • 3 tablespoons unsalted butter

How It’s Made

  1. Preheat oven to 350 degrees.

  2. With a pastry brush, lightly coat the bottom and sides of an 8x4 loaf pan with a clarified butter or unsalted butter.

  3. In a mixing bowl, combine dry ingredients: flours, baking powder, cinnamon, and salt. 

  4. Using a food processor process bananas until smooth.

  5. To the processor add cracked eggs, vanilla, and melted oils and butter. Pulse gently to combine.

  6. Add dry ingredients and blend until well combined scraping down sides if necessary.

  7. Pour the batter into prepared pan. Bake for 50 to 55 minutes or until a toothpick inserted comes out clean.

  8. Remove and allow to cool on a wire rack.

  9. Slice into thick pieces and spread with room temperature butter.

 
Everyone has that one Grandma whose home smelled of freshly baked goodies. The aromas welcomed you in the door and pulled you into the kitchen where you behold a couple of tea towel covered cooling loaves. Similar to the old fashioned bread, but lightened up for those desiring fewer carbs but the same great moist treat.
