St. Patrick’s Day Avocado & Bacon Deviled Eggs
Eggs are hands down my favorite food regardless of preparation. Add in a creamy avocado and crispy bacon and you have me at “hello”.
Might mention that a touch of Irish red headed heritage also make me desire these amazing one bite appetizers.
Whatcha Need
4 hard boiled eggs; sliced in half
2 medium organic avocados; sliced in half and pitted
1 tablespoon lime juice
1 clove of garlic; finely minced
1 teaspoon onion chives; finely diced
1/8 teaspoon cayenne pepper
Pinch of salt, and pepper
How It’s Made
Peel the eggs; slice in half lengthwise.
Scoop yolks into a small bowl.
Add in sliced avocado and mash with a spoon or fork until you reach a creamy consistency.
Stir in lime juice, minced garlic, chives, cayenne pepper, kosher salt, and black pepper.
Mix until thoroughly incorporated. Taste and adjust seasonings as desired.
Using a small spoon or resealable bag with corner snipped add a dollop of the mixture to each egg half.
Sprinkle with optional garnishes.
Serve immediately or they can hold for a few hours if serving at a party.
Did you Know
~ Crack eggs on a flat surface and peel under a slow stream of water to cleanly remove shells.
~ A touch of lime juice will keep the avocado from turning brown.
~ Garnishes can change the bite so consider ground paprika, cayenne, or chives as alternatives.
