Almond Flour Italian Pizzelle


This morning in the PNW, we had a few snowflakes mixed with rain. Therefore, I deemed it gave me artistic license to create a traditional Christmas treat in March. ;-) 

These light as air; crisp Italian waffle cookies are wait for it… sugar-free and keto-friendly. Yep! I said it sugar-free and prepared with almond flour and the perfect hint of vanilla. I then assembled into sandwich cookies with a smear of sugar-free chocolate frosting. Tied with string and delivered to our neighbors who just brought home their new baby, Olivia. 

My favorite preparation for what I like to refer to as my afternoon caffeine nap is plain served with a cup of coffee and a handful of blueberries for a touch of sweetness.

Whatcha Need

  • 4 large eggs

  • 1/3 cup plus 1 tablespoon swerve sweetener

  • 2 teaspoon Madagascar bourbon vanilla extract

  • 1/2 cup unsalted butter, melted

  • 2 cups almond flour 

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon salt

How It’s Made

  1. In a blender, combine eggs, serve, and vanilla and blend for a few seconds to combine over medium speed. 

  2. Turn down to low speed and slowly drizzle in melted butter and thoroughly combined.

  3. Remove top and add the almond flour, baking powder, and salt. Blend for 30 seconds to incorporate dry ingredients. Note the mixture will thicken slightly if allowed to cool slightly.

  4. Preheat the oven to 200. 

  5. Line cookie sheets with wire cooling racks.

  6. Preheat pizzelle press. Using coconut oil, very lightly coat the press.

  7. Using one tablespoon for each pizzella, pour the batter behind the center so when closing; it pushes forward to fill the entire pattern. Adjust batter quantity as needed to match the pattern and style of press.

  8. Close the lid and lock it in place. Cook for about 30 to 60 seconds until just turning a golden brown. 

  9. They will be very soft at this point, so remove from the press with a spatula to the prepared cooling racks. Trim any excess batter from the pattern and clean edges for a prettier presentation. 

  10. Place in the oven for approximately 15 minutes until set-up and are crisp. Adjust cooking time as needed.

  11. Drizzle with syrup, sprinkle with powdered sugar, ice with a sugar-free frosting.
