French Madeleines
Whatcha Need
2 large eggs
1/4 cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1/8 teaspoon salt
1/2 teaspoon lemon zest
1 1/8 cup almond flour
How It’s Made
Preheat the oven to 350.
In a bowl whisk the eggs for 2 minutes until you have a ribbon of egg.
Add in syrup, coconut oil, vanilla, salt, and zest. Mix well with a spatula to thoroughly combine.
Slowly add in flour mixing a little in at a time until all is incorporated, and batter is smooth.
Grease a madeleine mold with a little coconut oil, then add a spoonful of batter, spread out, and repeat.
Bake for 12-15 minutes or until golden brown.
Let the cookies cool and dust lightly with sugar free Dutch cocoa powder.
