French Madeleines


Whatcha Need

  • 2 large eggs

  • 1/4 cup maple syrup 

  • 2 tablespoons coconut oil, melted

  • 1 teaspoon vanilla extract

  • 1/8 teaspoon salt

  • 1/2 teaspoon lemon zest

  • 1 1/8 cup almond flour

How It’s Made

  1. Preheat the oven to 350.

  2. In a bowl whisk the eggs for 2 minutes until you have a ribbon of egg.

  3. Add in syrup, coconut oil, vanilla, salt, and zest. Mix well with a spatula to thoroughly combine.

  4. Slowly add in flour mixing a little in at a time until all is incorporated, and batter is smooth. 

  5. Grease a madeleine mold with a little coconut oil, then add a spoonful of batter, spread out, and repeat.

  6. Bake for 12-15 minutes or until golden brown.

  7. Let the cookies cool and dust lightly with sugar free Dutch cocoa powder.
