BBQ Chicken Pizza


Rustic in design but modern in flavors. The pizza comes together quickly, and each layer enhances the prior for a simplistic yet non-traditional pizza.

Choose your favorite bottled sauce or create a barbecue sauce that is sweet and tangy. Red onions thinly sliced are milder and, when baked in the pizza, become almost sweet. A sprinkling of scallions provides just the perfect touch of crunch and supports the red onion nicely. A pinch of red pepper flakes brings a hint of spice and heat.

The cheese selection is an essential aspect of pizza toppings. The gouda brings forward the grilled flavors with its smokiness and boasts a creaminess. At the same time, the mozzarella melts well and presents a mild, smooth taste enabling the other ingredients to shine.

Whatcha Need

  • 1 can pizza crust

  • 2 tablespoons olive oil, divided

  • 1 teaspoons garlic, minced

  • ⅓ cup barbecue sauce, divided

  • ¼ cup green onions

  • ½ red onion, sliced vertically

  • 2 chicken breasts, grilled and diced

  • 1 cup gouda cheese, shredded

  • 1 cup mozzarella cheese, shredded

How It’s Made

  1. Preheat the oven to 425°F.

  2. In a mixing bowl add a teaspoon olive oil. Open pizza dough can and shape into a ball. Roll around bowl and cover with plastic wrap and set in a warm area for at least 30 minutes.

  3. Meanwhile, in a skillet over medium-high heat 1 tablespoon olive oil and add diced chicken. Season with salt and pepper. Cook until browned and internal temperature reads 165℉ on a meat thermometer.

  4. Remove the chicken into a small bowl and toss with two tablespoons barbecue sauce of choice to coat thoroughly.

  5. Roll out the dough and shape into desired pan or rustic flatbread style. Brush lightly with olive oil and sprinkle with minced garlic.

  6. Blind bake for 10 minutes. Remove from oven and brush top with barbecue sauce leaving a 1/2” margin. Top with sliced red onions, diced scallions, barbecue marinated chicken, and sprinkle with cheeses.

  7. Return to oven and bake 15 minutes or until crust is golden brown and cheese is melted.

  8. Remove from oven and lightly spoon drizzle barbecue sauce over the top. Optional to sprinkle red pepper flakes for a bit of heat. Serve warm with a green side salad.
